A New Member

Wow. Where to start. First and foremost thank you to everyone for all of the great, kind, and loving comments from my hiatus post. I have missed you all very much. But I needed a break. A big break I guess.

That being said, I hope you all had a wonderful summer & fall. I’ve spent more time outdoors and NOT on a computer than I have in a long time. We gardened, wrangled chickens & ducks, took a family vacation with my parents &  brother, enjoyed life as usual, but even more so I think this year than others. Of course it went by way too fast. In fact just a few weeks ago I was thinking I needed to do a few ‘summer’ things yet, that is until I was reminded it’s just too dang cold out anymore!

Did you do anything fun and exciting?

My biggest news is that we added a new member to our household, and if you follow me on instagramtwitter or tumblr you probably already know about her.

It’s taken me a few years to finally feel like I wasn’t replacing Harley. I’ve been eyeing dachshunds ever since, but none did anything for me, that is until I saw Poppy Rose. I just knew she was the one.

Poppy is a miniature Dachshund, and just 13 weeks old. Boy did I forget how much work a baby is! But I don’t think either Hubs or myself have laughed so much in a long while. She is a monster, and I say that in the best way possible. Mostly.

Never in my life did I think I’d be buying clothes for a dog, but low and behold, here I am! And I’m even enjoying it.

With the onset of autumn I’ve been cooking up a storm. I’ll have some good recipes up in the next few days. One thing that has been starting my mornings the last few weeks is baked eggs. Gosh they just make me happy. I love eggs anyway, but this is a healthy way to eat them. You still get the sunny side up part of the deal, but they are way healthier. I bake them by themselves, or with left over veggies I have on hand. All you need to do is pop a few eggs in a oven safe dish that has been greased- I just spritz with a bit of olive oil, and bake for 12-15 minutes at 350 degrees. And when you serve them in a pretty bowl they taste even better!

Baked Eggs

My bantam hens are laying now, and that’s where the tiny eggs are coming from verses the one large egg! I keep thinking I should market these eggs for single people who don’t eat too much. They’d be perfect!
